The Rais Restaurant was born from the choice to stay, from the desire to continue to fill the eyes with the colours of the native land. It is not a simple restaurant; it is a family place, a "meeting place" where the senses are satisfied, where one tastes, drinks and feels good. San Vito Lo Capo is the smell of the sea and Dad's hands filleting the fish. It's the smell of the sautéed; it's the mother who cooks the Sunday couscous. The ingredients and dishes on the menu are part of the story we want to tell; they express a territory. The sea, the land, the effort of the fishermen or farmers and the chef's ability to preserve the flavour and enhance its character. The menu draws from the gastronomic tradition of the Province of Trapani but reinterprets it with respect and charm.
