The appetizer of the castle contains an explosion of flavours of our territory, such as cured meats and cheeses, omelettes and seasonal vegetables, pasta with black pig from the Madonie, cooked over a low flame with S'Elia tomato puree at km0 of our production, pasta with vegetables and legumes at km0, the pork knuckle cooked in a wood oven for eight hours, a vast choice of Madonite meats cooked on the grill such as sliced veal and pork steak, and finally our homemade Sicilian desserts as per tradition.
